japan’s most iconic dish sushi but where did it come from made by salt fermenting crucian carp in cooked rice for 3 years lactic acid fermentation gives it a unique flavor the rice is discarded before eating [Music] [Music] that’s right sushi was once pickled fish that was fermented in rice this gave it a distinctive sourness but how did it evolve into the sushi that we all know today the transformation first began around the 14th century to keep the rice edible fermentation time was shortened [Music] another shift occurred around the 17th century sushi gradually moved away from fermentation becoming a dish made with vinegar ever changing with the times sushi’s sure to keep evolving
