Ash drying. A distinctive food culture uses volcanic ash to dry [Music] foods. Nagi Shunko is a local chef. Thinly sliced fish fillets under a water permeable film are covered in ash. Volcanic ash absorbs the moisture containing the fishy smell, enhancing the flavor. Fish doesn’t smell after cooling, allowing them to create this lunch. Sakurajima Hayiboshi Bento is a local specialty.
