Shining silver horse mackerel makes this bento box a feast for the eyes. [Music] 500 a.m. at Shizoka’s Numazu port. Fresh caught horse mackerel, the lunchbox’s star ingredient. While it’s still at its freshest, the fish is cleaned and filleted. [Music] By early afternoon, it’s delivered to the box lunch maker shop. Packing in salt removes excess moisture and extends shelf life. [Music] Resting overnight enhances the fish’s natural umami. The next day, it’s briefly soaked in a diluted vinegar bath. [Music] The wasabi also comes from Shizuoka. Nearby, Mount Amagi sees rain and mist throughout the year and has abundant spring water. Ideal conditions for growing wasabi. The mineralrich waters mean that no fertilizers are required. A box lunch full to the brim with blessings from the seas and mountains of Shizuoka. A local favorite for 25 years.
